A Celebration of Signature Flavors: My Evening at the Opening of Cebu Food & Wine Festival 2026
There are dinners, and then there are evenings that remind you why food has the power to bring people together.

I had the pleasure of attending the grand opening of the Cebu Food & Wine Festival 2026 at the beautiful Crimson Resort & Spa Mactan, where some of the country’s most celebrated chefs gathered for an unforgettable showcase of culinary artistry aptly called Signature Flavors.
Set against the stunning backdrop of Mactan’s coastline, the opening event immediately set the tone for what promises to be another exciting edition of Cebu’s premier food and wine festival. The atmosphere was festive yet elegant, with food lovers, industry personalities, and members of the media all eager to experience a collaboration of flavors crafted by some of the finest names in the culinary scene.
The evening featured an impressive lineup of chefs, each bringing their own signature style and expertise to the table.
Representing Azure Beach Club was Chef Bharat Singh, whose dishes highlighted bold flavors and impeccable execution. From the first bite, it was evident why Azure continues to be recognized as one of Cebu’s premier dining destinations.
From AKA, Chef Masahiro Kinoshita showcased the precision and artistry that have made him one of the most respected names in Japanese cuisine. Every element of his creation was thoughtfully composed, balancing flavor, texture, and presentation with remarkable finesse.
Hosting the evening was Crimson Resort & Spa Mactan’s own Chef Andrew Simpson, whose leadership helped bring together this exceptional culinary collaboration. The seamless flow of the dinner reflected the resort’s commitment to delivering world-class dining experiences.
Adding a taste of Spain to the celebration were the acclaimed duo behind ENYE, Chefs Chele Gonzalez and Javier Garcia Amador. Known for elevating Filipino ingredients through modern Spanish techniques, their dishes were among the highlights of the evening. Their approach continues to redefine contemporary Filipino cuisine, blending innovation with a deep respect for local flavors and traditions.


What made the dinner particularly special was how each chef’s personality shone through their respective courses. Rather than competing for attention, the dishes complemented one another, creating a culinary journey that celebrated diversity, creativity, and collaboration.



Beyond the food, the event served as a reminder of how far Cebu’s dining scene has evolved.
